Southwestern cornmeal muffins

Stone-ground cornmeal is a correct offer of vitamins, including fiber, nutrition C and potassium.

  1. Low Elephantine

Ingredients

  1. 1 cup all-fair flour
  2. 1/4 cup sugar
  3. 2 teaspoons baking powder
  4. 1 cup rotund-free milk
  5. 4 tablespoons (or 1/4 cup) vegetable oil
  6. 1/2 cup egg replace
  7. 1 1/4 cups stone-ground cornmeal
  8. 1 cup fresh or cream-vogue corn
  9. 1/2 green bell pepper, chopped

Directions

Heat the oven to 400 F. Line a muffin pan with paper or foil liners.

In a massive bowl, add the flour, sugar and baking powder. Creep to mix evenly.

In a separate bowl, mix the milk, oil, egg replace, cornmeal, corn and green pepper. Add to the flour combination and mix factual except moistened but mild a bit lumpy.

Divide the aggregate among the 12 muffin liners. Bake 20 minutes or except muffins are gentle brown.
